Vietnamese 101: banh xeo

today, kids, we're going to be learning about banh xeo! can you say, "banh xeo"?! of course you can't, you uncultured swines!

now the exact ingredients to making the crepes i'm not sure. this is pretty much a lightly fried crepe that prolly consist if banh xeo flour and egg to get that yellow color. it should be lightly crunchy, almost flaky but still hold the structure without breaking apart like actual flaky pastries. it taste by itself a mild sweet taste, usually the batter has some chopped scallions in it as well

now in it is usually shrimp, pork (the ones where it's half lean, half fatty, pretty much like pork belly), bean sprouts, scallions, onions, and mushrooms. you pair it wish the homemade fish sauce, and raw vegetables like cucumbers, mints, herbs, and lettuces. it should end up looking like this

now enjoy motherfucker! if you go to restaurants, usually they give you one, precooked, and usually chewy or hard. if you do it right, you'll be stuffed out your ass after 2. :-)
